As padel is played in an enclosed court with glass walls, spin is important, as it will affect how the ball rebounds off the surfaces, adding another layer of complexity (and opportunity) to your shots.
Top spin is created by brushing up the back of the ball. It causes the ball to dip quickly and bounce higher after it lands.
You should use top spin:
Back spin is generated by brushing down the back of the ball, causing it to float and stay low after the bounce.
You should use back spin:
This is less common but very effective. Side spin is created by brushing the ball sideways, making it curve during flight and bounce unusually off the glass.

Set up a video camera that has slow motion (your mobile phone will be fine) and record shots, then watch them in slow motion. Are you brushing the ball or hitting flat? Small adjustments will make a big difference.
